Despite his love for fresh fruits and pasta…his career working in acclaimed kitchens such as La Mariposa and El Parador, and now at La Luna Restaurant keeps him humble. Chef Mario also wears a dishwasher’s jacket rather than a chef’s coat so he is not afraid to get his hands dirty with the rest of his staff. His personal mantras are? “Do right when no one is watching.” And “Treat others the way you would like to be treated” as also the golden rule of Gaia Hotel and Reserve.

We are excited to give you Chef Mario’s recipe for his delicious Signature Crusted Panko Tuna Dish which is from the making to the bite.

Orange Risotto Ingredients

100 grams. Italian rice cooked already. (Risotto)
1 oz white table wine .
1 tablespoon chopped white onion.
3 cloves of crushed garlic.
50 grams cooked vegetables.
1 tablespoon butter
4 oz orange juice.


In a skillet crystallize the onion in the butter , add the garlic, add the rice wine and let reduce for 1 minute, then add the orange juice and the vegetables , mix well and let reduce until it forms a viscous mixture , but not dry. Serve tuna dish molded.


Panko Tuna Ingredients

1gr Black Pepper

1 med egg

1.5 oz Soy Sauce

2 oz Vegetable Oil

100 gr Bread Crumbs

15 oz Honey

150 gr Tuna

¾ tsp Wasabi

½ tsp Coriander



Marinate the tuna in soy and add bread crumbs, egg, honey and ginger. Cook to preference and do a horizontal cut. Cover with mixture of sesame vinaigrette and serve aside sauce made of wasabi, soy sauce and coriander.
